FRESH & CREAMY
The complicated vinification, together with the best grapes, gives many nuances in both aroma and taste. The scent is the classic solaris elderflower scent and pineapple, but ripe apples and pears are also found. The dishes add a bit of vanilla, while the battonage and the malolactic fermentation contribute notes of yoghurt and popcorn. The wine is both oily and creamy, but there is enough acid to keep the aftertaste fresh. The wine is completely dry, but the full-bodied taste of fruit gives a feeling of a little sweetness.
The best solarium field was identified and the grapes were hand-harvested and sorted to achieve the highest quality. after stalking, and four hours of maceration, the grapes were gently pressed and the must rested overnight. The must was divided between new French barrels, used French barrels and a steel tank, where the fermentation was started with a burgundy yeast type. all the wines were simultaneously fermented malolactically as well. The wine has been on casks for six months, where battonage has been used. Finally, the wine is blended from 18% new oak barrels, 26% used oak barrels and 56% steel tank.
FRISK & CREMET
Den komplicerede vinifisering sammen med de bedste druer, giver mange nuancer i både duft og smag. Duften er den klassiske solaris hyldeblomst- duft og ananas, men også modne æbler og pære findes. Fadene tilføjer en smule vanilje, mens battonage og den malolaktiske gæring bidrager med noter af yoghurt og popcorn. Vinen er både fed og cremet, men der er nok syre til, at eftersmagen er frisk. Vinen er helt tør, men den fyldige smag af frugter giver en fornemmelse af lidt sødme.
Den bedste solarismark blev identificeret og druerne blev håndhøstet og sorteret for at opnå den højeste kvalitet. efter afstilkning, og fire timers macera- tion blev druerne nænsomt presset og mosten hvilede natten over. Mosten blev delt mellem nye franske fade, brugte franske fade og ståltank, hvor gæringen blev sat i gang med en bourgognegærtype. alle vinene blev samtidig også gæret malolaktisk. Vinen har ligget på fade i seks måneder, hvor der er blevet brugt battonage. Til sidst er vinen blendet af 18% nye egefade, 26% brugte egefade og 56% ståltank.

ABOUT THE WINERY
DYREHØJ VINGAARD
Dyrehøj Vingaard is located on the sunny Røsnæs near Kalundborg and is Denmark's largest vineyard with over 30,000 vines. The first vines were planted in 2008. The calcareous slopes and the cool climate provide a great basis for growing grapes. In the wine cellar, RÖS is created by the winemaker and the entire team behind the vineyard. The grape varieties in the fields are divided into 6 white wine varieties and 13 different red wine varieties. The climate at Røsnæs is one of the driest and sunniest in Denmark. The Røsnæs peninsula is a mound of clay, sand, gravel and stone, which was pushed up during the last ice age.
Dyrehøj Vingaard ligger på det solrige Røsnæs ved Kalundborg og er Danmarks største vingård med over 30 000 vinstokke. De første vinstokke blev sat i 2008. De kalkholdige skrænter og det kølige klima giver et fantastisk grundlag for at dyrke druer. I vinkælderen bliver RÖS skabt af vinbonden og hele teamet bag vingården. Druesorterne på markerne er fordelt på 6 hvidvinssorter og13 forskellige rødvinssorter. Klimaet på Røsnæs hører til det tørreste og mest solrige i Danmark. Røsnæshalvøen er en vold af ler, sand, grus og sten, som blev skubbet op under den sidste istid.
Solaris
Solaris is a modern cross between Merzling and Geisenheim 6493, created by Norbert Becker in Freiburg in 1975. It is suitable for growing in cool climates as it ripens very early. Solaris is the most important white wine variety in Denmark and fully shows the regional character of Røsnæs.
