Clos de la Mousse is located south-east just south of the main city of Beaune, up the Teurons, on the premier cru slope. A monopole field, surrounded by walls, for Bouchard of 3.36 hectares, which, after separation by the revolution, was gradually acquired during the 19th century and finally reunited in 1872. The land is on the middle slope which under most conditions provides the optimum mix of sunlight, temperature and ventilation. The soil is limestone/clay on clay subsoil. Wine has been grown here from before 1220, when the field was donated to the church in Beaune.

Clos de la Mousse ligger sydøstvendt lige syd for hovedbyen Beaune, klods op ad blandt andet Teurons, på premier cru skråningen. En muromkranset monopol-mark for Bouchard på 3,36 hektar, som, efter opsplitning ved revolutionen, gradvist blev opkøbt i løbet af 1800-tallet og endeligt samlet i 1872. Marken ligger på midtskråningen, der under de fleste forhold giver den optimale blanding af solindfald, temperatur og ventilation. Jordbunden er limsten/ler på leret undergrund. Der har været dyrket vin her fra før 1220, hvor marken blev doneret til kirken i Beaune.

BOUCHARD PÈRE & FILS


Bouchard Père & Fils is one of the oldest producers in Burgundy and is the largest vineyard owner in the Cote d'Or. The house owns, among other things 12 acres of Grand Cru, as well as 74 acres of Premier Cru fields. In 1995, Joseph Henriot bought himself into Bouchard Père & Fils, and he invested a lot of money in building a new winery that was completed in 2005. In the 3-story underground building, gravity takes the wine through the various processes of vinification. The modern technology combined with respect for traditions and the old know-how ensure that the many wines of the domain can each express the diverse terroir found in Burgundy. In 2015, Bouchard Père & Fils was certified sustainable in areas that focus on eco-friendly approaches to winemaking.


Bouchard Père & Fils er en af de ældste producenter i Bourgogne og er den største vinmark-ejer i Cote d'Or. Huset ejer bl.a. 12 hektar Grand Cru, samt 74 hektar Premier Cru, marker. I 1995 købte Joseph Henriot sig ind i Bouchard Père & Fils, og han investerede mange penge i at bygge et nyt vineri, der stod færdigt i 2005. I den 3-etagers underjordiske bygning sørger tyngdekraften for at transportere vinen igennem de forskellige processer i vinifikationen. Den moderne teknologi kombineret med respekt for traditioner og den gamle know-how sikrer, at domænets mange vine hver især kan udtrykke det forskelligartede terroir, der findes i Bourgogne. I 2015 blev Bouchard Père & Fils certificeret bæredygtig indenfor områder, der fokuserer på miljøvenlige tilgange til vinfremstillingen.


General grape descriptions



Pinot Noir


The fashionable red burgundy grape is capable of producing divinely scented, gorgeously fruity expressions of place but often unwilling or unable to do so. Pinot Noir is sensitive to the size of crop it is expected to produce, and many vapid examples exemplify an over-demanding yield. It ripens relatively early so is not suitable for very warm regions where there would be no time to develop interesting flavours before acid levels plummet. On the other hand, many of the cooler regions in which it thrives suffer autumn rains which can rot Pinot's thin-skinned berries, resulting in pale, tainted wines. The Pinot Noir grower's lot is not an easy one.

This ancient eastern French vine is, with Gouais Blanc, parent of a host of other varieties including Chardonnay, Gamay and the Muscadet grape Melon de Bourgogne. Because it is so old, there are many well-established mutations such as Pinot Gris, Pinot Blanc and Pinot Meunier and there is enormous variation in wine quality between different clones. Planting the wrong clone in the wrong place is one of many reasons for the wide variation in quality between different red burgundies and different varietal Pinot Noirs from elsewhere.

The positive side of all this is that Pinot Noir is a very transparent grape. It really can communicate the difference in terroir, or grape-growing environment, between adjacent plots of vineyard.
