Chablis

When it comes to white wines, and Chardonnay in particular, Chablis is really a great way to go.  They are crisp, fruity, acidic and not overloaded with butter and oak. This wine pours a medium to deep gold in the glass with tropical fruit and mineral notes on the nose; it is medium plus in body and has flavors of green apple, lemon and citrus fruit; super clean throughout as Chablis usually are.  Very clean fruit, nice acidity and a lasting finish that has a touch of orange liqueur.

Når det kommer til hvide vine og især Chardonnay, er Chablis virkelig en god vej at gå. De er sprøde, frugtagtige, sure og ikke overbelastet med smør og eg. Denne vin er dyb guld i glasset med tropiske frugter og mineraltoner i næsen; den er medium plus i kroppen og har smag af grønt æble, citron og citrusfrugter; super ren overalt som Chablis normalt er. Meget ren frugt, flot syre og en holdbar finish med et strejf af orange likør.

ABOUT THE WINERY


MARCEL SERVIN


François Servin’s family can be traced back to the very first marriage records in Chablis in 1654, but their roots stretch even further. In 1537 the Monks of the Abbey of Pontigny established a list of the owners of vines in Chablis and the Servin’s name is inscribed there. This uninterrupted succession of generations of passionate winemakers has created an important legacy of old vines and a profound understanding of terroir.


François Servins familie kan spores tilbage til de allerførste ægteskabsoptegnelser i Chablis i 1654, men deres rødder strækker sig endnu længere. I 1537 oprettede munkene fra klosteret Pontigny en liste over vinstokkeejerne i Chablis, og Servins navn er skrevet der. Denne uafbrudte række af generationer af lidenskabelige vinproducenter har skabt en vigtig arv fra gamle vinstokke og en dyb forståelse af terroir.

Chardonnay


Wine drinkers find it flatteringly easy to enjoy, with its broad, exuberant charms, relatively high alcohol and low acidity, and lack of powerful scent. Vine growers find it easy to grow productively and profitably (it can yield well, ripen usefully early, although buds rather too early for frost-free comfort in cool climates). And winemakers revel in the range of different winemaking techniques to which Chardonnay readily submits: not just a wide range of dry white wines with more weight than most, but delicate sparkling wines and even a few extremely successful sweet white wines made with the benefit of 'noble rot'.
